Welcome to my little corner of the world. I’m Eshani, and I’m so happy you’re here! Food and I have always been an endless love affair, but it took the world coming to a standstill to get me into the kitchen and cooking! (Quite literally, we’re talking 2020). Within a year, I went from being afraid of the pressure cooker to cooking up a storm and here we are!

My experiences with food have been largely Indian, with more of a global influence. Moving to the US, I have had the privilege of meeting people from many different parts of the world, including India – and truly discover not just global cuisines, but also the diversity of dishes from within India. Working in New York City has allowed me to explore food like never before, but when I’m down and out, there’s nothing more comforting than a bowl of curd rice with a curry leaf-mustard seed tadka, or a close second, a bowl of ghee-laden dal rice.Here on the blog, I’ll be sharing easy everyday and unique recipes, usually with a twist because I absolutely love fusion dishes and experimenting with flavor. 

All equally tasty and definitely more on the healthy-ish side – I promise, and I truly hope you enjoy cooking and sharing them with friends and family! ‘The Dancing Cookbook’ is an amalgamation of the two hobbies that inspire me and bring me so much joy, and I’m here to share it with you.
