Ingredients

  • 2 Garlic Naan

  • 1/2 Red Bell Pepper, diced small

  • 1/2 Green Bell Pepper, diced small

  • 1/4 Red Onion, diced small

  • 1/2 Jalapeño, diced small (optional)

  • 1/2 cup Sharp Cheddar Cheese, freshly grated/sliced

  • Tandoori Mayonnaise

  • 1/4 cup Mayonnaise

  • 2 Tbsp Tandoori Masala

  • 1 Tsp Tomato Ketchup

  • 1 Tsp Kashmiri Red Chili Powder

  • 1 Tsp Black Pepper, ground

  • Squeeze of Lemon

  • Salt, to taste (optional)

Instructions

  • Heat up the garlic naan according to package directions - brush with a little butter for that shiny finish.
  • Tandoori Mayonnaise: assemble all ingredients in a bowl and mix well.
  • Sauteed Veggies: In a pan, add 1 tsp olive oil and add in the onions and peppers. Lightly saute - we want the veggies to retain their bite. Add your favorite seasonings or just lightly salt and pepper.
  • Sandwich: Slather the tandoori mayo onto the back of the crisped up naan, and top with the peppers, onions and cheese. Add jalapeño for a little more spice. Close the sandwich and toast with butter on a skillet over medium heat. Slice in half & enjoy hot, pair with some tomato soup for a full meal.

  • A smoky, spicy homemade tandoori spread meets crunchy veggies in this cheesy, flavorful explosion of a grilled cheese – leveled up with garlic naan! You can use store bought tandoori mayonnaise as well or sub the mayo for greek yogurt for a mayo-free version. Additionally, the veggies in the sandwich can be raw or lightly sauteed in some seasonings and then added to the sandwich. While the sauteed version gives a tastier result, you can just add them raw if in a time crunch.
