Instead of the traditional tortilla, a flaky, whole wheat paratha serves as the base, providing a hearty and slightly nutty foundation. The star of the dish, a spiced paneer mixture, combines shredded paneer with fragrant scallions, fiery green chilies, and a medley of aromatic Indian spices like cumin, coriander, and chaat masala, creating a savory and slightly tangy filling. Ingredients

  • 2 Tortillas

  • 2 tbsp cilantro chutney

  • 1 small cube Amul Cheese/Sharp Cheddar Cheese

  • Paneer Filling

  • 1/3 Paneer block, shredded

  • 1/4 cup Scallion greens

  • 1/2 Green Chili, finely chopped

  • A handful Cilantro leaves, finely chopped

  • 1 tsp Cumin Powder

  • 1 tsp Red Chili Powder

  • 1 tsp Coriander Powder

  • 1 tsp Chaat Masala

  • 1 tsp Salt, more to taste

Instructions

  • Paneer Filling: Mix the ingredients listed above to make the paneer filling.
  • Quesadilla: Place a flour/whole wheat tortilla on a heated skillet. Spread cilantro chutney all over and top with the paneer filling. Grate in some Amul cheese (optional). Fold and toast on both sides. Slice and serve hot with some more chutney/raita or your favorite condiment. Enjoy!
